Based on what you've put here (and my own personal thought's) I'd say INFJ LIE>INTJ EIE. His ability to read the room emotionally could be due to a strong creative Ni, as well as him making good use of role function Fe.
The sconics website describes the LIE's relationship to Fe this way

"While they may try to present themselves as friendly, they most typically come off as polite but relatively unengaging emotionally. It is often difficult for them to spontaneously display strong emotions, and they may come across as stiff or overly contained in situations where loud or intense emotional participation is expected of them. Instead, it is a much more natural interactional style for LIEs to discuss matters that they feel are of substance and importance, and they much more naturally adopt the subdued, candid and businesslike style suited to this role."

This would explain why Griffith thrives in the court, where a formal and careful demeanor is key to success, but is unable to tell Guts why he really want's him around, not because he views him as a tool like he claims, but just because he likes the guy.

Griffith is goal and results driven, so much so that he loses sight of what's really important to him, and ultimately sacrificing his Fi ethics for Te logic.

"The man, who would be my friend, must have his own reason for living, beyond me. And he should put his heart and soul into protecting his dream. He should never hesitate to defend it, even against me. For me to call a man my friend, he must be equal to me in all respects."

As far as IDR gose, Griffiths mane strength as a military leader was't his ability to formulate brilliant strategies, although he was also good at that (Ni-Ti.) His strength came from his ability to read people, to figure out what they wanted, how they would behave, and who he could rely on (Fe.)

So after finishing the '97 anime and filling in some of the missing pieces by reading a bit of the manga, I'm pretty sure he's either INFJ LIE or INTJ EIE and it's a coin flip between either. Some of his schemes depend upon knowing how people would react emotionally (i.e. capturing Doldrey and killing the rival nobles), he's very socially aware and seems to know exactly what to say and do (up until a certain event), he sincerely cares about his soldiers and their devotion to him is itself a major motivation, and he lacks a concrete goal so much as an abstract desire for power and glory. If he was INFJ EIE obviously he would be more openly emotional and less willing to make sacrifices, if he was INTJ LIE he would be more willing to let Guts walk away, less easily convinced to go through the baptism, and generally would have less magnetic charisma.

Comes off as being primarily an intuitive, emotional individual (literally a dreamer) who's forced by circumstance and trauma to restrain that part of him. Those who habitually chase increasingly unreachable abstract goals are rarely Thinking types. This impression may change as I get more into the series.

adding onto that, griffith doesn't seem like people give him "stimulation" but rather are a means to an end, usually when he isn't commanding, he's talking among only a few people which are his group

yeah! i agree, griffith really seems like he's motivated by his ideal of a dream (intuition) than rationality or order like an "entj" or "te-dom"
